Pat Chef/Owner

I’m พรรษชล or, in English, Pat.

I grew up in Thailand but I've lived in Sussex for over ten years. I love to cook for family and friends at every opportunity. The way they have enjoyed the Thai dishes I've served them has encouraged me to share my love of Thai food wider in the community where I live.  So, now, I'm starting a business to bring Thai street food to the streets of Sussex just like it is at home -  fast, fresh and tasty.

Born and bred in Sussex, I'm a world-travelled, business and technology programme manager. I jumped at the chance to help set up my wife in business especially as I am able to say I know we have a winning product as I've relished her cooking skills over ten years. We've had so many friends tell her she should share her food more widely, it s great to be able to help make that happen even if my major contribution is dishwashing and doing the home deliveries.

 

This may not be be the biggest, highest budget programme I've ever run but its been by far the most satisfying and even at these early stages, it's been fantastic to experience the positive reaction we've had from our customers.

Yellow Bird

Yellow Bird, our 2005 Vauxhall, has ten years' experience in the catering business.  After a long apprenticeship in the kebab trade, we refitted Yellow Bird in 2014 ready for a new career in Thai cuisine. When we acquired her, a previous owner had already named her Yellow Bird and we stuck with that name as yellow is a propitious colour in Thailand; the colour of royalty and it just happens to be Pat's birth colour.
